Can you sub Gruyère w Parmesan? :)

What is there not to like? For diabetics and prediabetics: no sugar, for people on low fiber diet: oatmeal, for people with high cholesterol: slowly absorbed oatmeal and olive oil, for protein: delicious and scrumptious eggs and delectable cheese. The combination gives you energy and long lasting satiety. Mimosa anyone?
