and that’s what I call being 20-something in 2024.
My smashed egg salad recipes consistently go viral every time I post them on my IG or TT, and there are multiple reasons for that. First, they’re extremely easy to make; second, they’re filling and decadent without being too heavy in your stomach; and third, they’re absolutely freaking delicious. There are also, like, 105 different ways to make them. I made up that number, but you get what I mean.
So here are a few of my favorite smashed egg salad recipes to sustain us all through summer, as we patiently wait for Sabrina’s new album to come out in August (ugh):
for the spice enthusiasts: smashed chili egg salad
ingredients: 2 jammy eggs, 1 tsp. kewpie mayo, 1 tsp. chili crisp, sesame seeds
directions: combine all ingredients in a small bowl and smash with the side of a spoon, stirring the ingredients together in the process. Top on your favorite toast (maybe add avocado?!) and some extra sesame seeds.
for the pickle lovers: smashed pickle egg salad
ingredients: 2 jammy eggs, 1/2 tsp. dijon mustard, 1 tbsp. finely chopped pickles or pickle relish, 1 tbsp. finely chopped chives, cracked black pepper
directions: combine all ingredients in a small bowl and smash with the side of a spoon, stirring the ingredients together in the process. Top on your favorite toast with some extra black pepper and chives. Also delicious on cottage cheese for added protein!
for those who’d rather be in italy: smashed cacio e pepe egg salad
ingredients: 2 jammy eggs, 1 tsp. kewpie mayo, 2 tbsp. grated parmesan cheese, 1 tsp. honey, cracked black pepper
directions: combine all ingredients in a small bowl and smash with the side of a spoon, stirring the ingredients together in the process. Top on your favorite toast with some extra grated parm and cracked black pepper.
for those who put feta on everything: smashed feta egg salad
ingredients: 2 jammy eggs, 1 oz. block feta cheese, 1 tsp. olive oil, dill and/or mint, za’atar
directions: combine all ingredients in a small bowl and smash with the side of a spoon, crumbling the feta cheese and stirring the ingredients together in the process. Top on your favorite toast with some extra herbs and za’atar.
